Introduction

Valle Fiorita is a small business in Puglia that produces baked goods such as puccia salentina, pizza dough and pan surprise. Since 1997, they have been working with major national and international retailers, particularly in Northern Europe. They now have six production lines to manufacture their extensive product range.

The problem

The decision to launch this ambitious programme was driven by the need to respond to growing market demand by increasing production capacity, while also overcoming operational inefficiencies linked to a monitoring and maintenance system based on traditional methods. While rigorous quality control protocols have always ensured high product standards, reliance on human supervision and manual recording of process parameters has introduced slowness into data analysis and potentially suboptimal responsiveness.

To address these inefficiencies and support the planned expansion, a production line has been designed incorporating Industry 4.0 technologies to digitize process monitoring and control, thereby improving overall productivity. At the same time, awareness of the energy impact has driven the search for low-consumption technological solutions, in line with the company’s commitment to sustainability and long-term competitiveness.

The solution

In order to address the identified challenges, Valle Fiorita adopted a design approach focused on integrated digital transformation. The overall vision for the solution was realised through a series of key steps. First, a digital roadmap was defined to guide the modernisation of business procedures. Next, advanced real-time monitoring and traceability systems were implemented to provide complete visibility of machine operation and production data. Meanwhile, energy-efficient machinery was carefully selected, and the production layout was redesigned to optimise workflows and internal logistics.
